INGREDIENTS: sheep milk, goat milk, rennet, salt
WEIGHT: 2,5 – 5,0 kg.
APPEARANCE: cylinder basket obtained with molds of junco
RIND: striped, surface treated with olive pomace oil which gives vary in color from yellow to dark brown
TEXTURE: white, slightly glance, decided but pleasant aroma, slightly spicy flavor which varies depending on the degree of maturation
SEASONING: longer than 90 days
