Casu Sardu

Semi-cooked cheese, classic of Sardinian pastoral tradition, it has an high content of soluble protein and essential aminoacids, calcium and phosphorus useful for the nutrition of children, to encourage the process of ossification and to fight osteoporosis.

INGREDIENTS: sheep milk, goat milk, rennet, salt
WEIGHT: 2.4 – 3.0 kg.
SHAPE: bowed
RIND: surface treated with olive pomace oil which gives it the typical traditional appearance, color ranging from bright yellow to dark brown
TEXTURE: uniform white or straw-yellow, strong and developed aroma, taste more or less spicy depending on the seasoning
SEASONING: longer than 90 days

Juncu

Semi-cooked cheese whose characteristic shape is due to the use of molds made of reed (junco) according to the ancient Sardinian traditions.

The balanced ratio of components useful to human nutrition makes this cheese a product indicated in the dietetic-therapeutic aspect.

INGREDIENTS: sheep milk, goat milk, rennet, salt
WEIGHT: 2,5 – 5,0 kg.
APPEARANCE: cylinder basket obtained with molds of junco
RIND: striped, surface treated with olive pomace oil which gives vary in color from yellow to dark brown
TEXTURE: white, slightly glance, decided but pleasant aroma, slightly spicy flavor which varies depending on the degree of maturation
SEASONING: longer than 90 days
